TIPS
You can add any vegetable to this stir fry. If it’s a vegetable then it can go in. Don’t be afraid to experiment with different vegetables and spices to give this stir fry plenty of flavour.

TOTAL COOKING TIME: 20-minutes
TOTAL PREP TIME: 10-minutes
INGREDIENTS:
1 tbsp coconut oil
1 onion sliced
1 courgette chopped
6 baby sweet corns
1 red pepper
1 green pepper
1 carrot
1/2 broccoli
2 tbsp apple cider vinegar
1/2 tsp paprika
pinch cayenne pepper
1/2 tsp turmeric
1/2 tsp cumin
METHOD
- Heat the coconut oil in a wok. Add vegetables and cook for a couple of minutes.
- Then add the apple cider vinegar and spices, cook for a further 8-minutes stirring frequently.
- Serve with chicken or on it’s own.
